God Father of Biodynamic Wine - Nicolas Joly

今次試既就係 Nicolas Joly 既 biodynamic wine, N.Joly 被稱為God Father of Biodynamic Wine

佢早在1980年開始 Biodynamic Farming,跟隨日月星晨,陰曆去 Farming,同時利用500號系列配方去改善泥土質素

N.Joly 隻酒係 100% Chenin Blanc 做,完全 Mature Grape 去做,甚至有 botrytis。
同埋,依支白酒係要 Decant,可以 breathe 半日,甚至1星期,佢聲稱質素會愈來愈好。

講返隻酒,今次飲係 佢3塊田之中最好既田,Coulee de Serrant 2014

開 Foil/Capsule 個時,完全feel到好似開舊酒一樣,再睇個cork,濕濕地咁。之後用Ahso開,再倒入Decanter,初聞好似舊酒,Sherry咁既Aroma

Limited racking, batonnage, small doses of sulphur and light filtration

14.5% abv
100% Chenin Blanc very mature grape

Appearance: Intense Golden Yellow
Nose: Honey, Apicot, White Peach, Hint of Ginger
Palate: Apicot, Medium+ Acidity, Rich Mineral, Great Finish with sweet apicot (>60 seconds)
Conclusion: Very Good and can age more and more

有質素真係可以擺好耐同飲好耐
如果可以既,可以每日飲一杯之後recork,可以飲足一星期
