今次去 Luxury 係食佢既 Tomahawk Steak

真係好大塊








Chateau Boyd Cantenac 2000 Margaux Region 3rd growth
13% abv
Opened at 5pm
初開已聞到香味,好香Cassis, Coffee

開左3個鐘先入狀態

60% Cabernet Sauvignon
25% Merlot
8% Cabernet Franc
7% Petit Verdot

40yr old vine

Appearance: Medium Ruby with red hue
Nose: Cassis, Coffee, Mint, Dark Plum, Chocolate
Palate: Dry, Medium acidity, soft and round Medium+ tannin, long finish with dark plum
Conclusion: Good and can age



同場有一支New Zealand Pegasus Bay Encore Noble Riesling 2010 Waipara Valley
依支我飲過佢2011,都令我好Impressive

10.5% abv

Appearance: Medium Golden Yellow
Nose: Orange Peel, Honey, 柑桔, 菊花,
Palate: Sweet, High Acidity, balanced, long finish with hint of zest and orange blossom
Conclusion: Good and can age

Master of Wine Pinot Noir MasterClass

由 Romana Echensperger MW 講解 Pinot Noir

Pinot noir 係 Devil's Wine (HAHAHA)

Big bunch grapes mean high yield
Shoulder on grape mean more acidity

Dijon Clone 細number mean old version, 大number mean new version (eg 777, 114, 828 etc)
Pinot noir and Syrah(Deep color, but not much tannin) : with stem fermentation, stem more robust tannin, menthol, absorb color

Yeast active at 15Deg C
Concrete Vessel, even temperature spread

Dont buy Roussillon Pinot Noir

Kaiserstuhl (German Region) : Flinty, Volcanic Rock
Kastanienbush GG vineyard

Botrytis damage pinot color

Graubunden: Slate

NZ Marlborough fruit forward type, fruit aromatic, entry level
NZ Martinborough subtle, similar to Burgundy Pinot noir

New Zealand Sweet Wine

今次飲甜酒
講真, 甜酒唔係我最愛, 但學酒點都要試

Sweet Wine in New Zealand , 講真 NZ 做開 Sauvignon Blanc, Pinot Noir 依d still wine 為主
但Sweet Wine真係少見既

見平平地, 試下支 half bottle

Pegasus Bay Encore Noble Riesling 2011 New Zealand 10.5% abv ($227.8 因為咁岩有85折)
依支係用上最少 50% noble rot Riesling 去造

Canterbury Region (South Island)

Appearance: Amber
Nose: Apricot, Orange Blossom, Orange peel, honey
Palate: Apricot, Rich mineral, great finish, 穿透力強, high acidity to balance, full body
Conclusion: Very good , 飲完可能真係會 Encore !

Biodynamic Wine

是夜參加了 Biodynamic Wine VS Organic Wine tasting event
Understand how biodynamic viticulture is like.

Fungicide, Insecticide, Pesticide, Herbicide, Fertilizer ( Fungicide will ONLY be used in Biodynamic Viticulture)

Ch. Pontet Canet certified as Biodynamic GCC in Bordeaux. Year 2007 was poor vintage with heavy rain.

soil pH value below 5 not good for growth

100% Organic USA wine means not using SO2 whilst EU organic wine just use organic viticulture

Understand how 500 serial material for Biodynamic Viticulture, very ugly and weird method
500 - Horn Manure 牛角 filled with 牛屎
501 - Horn Silica 牛角 filled with 石英粉
502 - Yarrow
503 - Chamomile
504 - Stinging Nettle
505 - Oak Bark
506 - Dandelion
507 - Valerian
508 - Horsetail 鼠尾草 (not quite effective)

而我地成日話有 Mineral Aroma, 其實係指 Mercaptans (Mineral) means Gun Powder, Flinty, Sulfur with Yeast Chemical Reaction.

Yeast strain reduced by SO2
SO2 with Oak chemical reaction to create coffee aroma....


- Tannin felt by Gum : come from Grape Skin and Seed
- Tannin felt by Tongue : come from New Oak
- Fertile Soil, More Herbaceous
- Temperature Over 35 deg C, stop Photosynthesis

Minerality related to Stone, Flint, Smoky, Chalky (Typically region from Chablis, Sancerre, Wachau, Mosel, Priorat)

StoneSoil + Acid + Cool Climate - Ester (Fruity) - Oxygen = Mineral

今次飲 New Zealand Blanc de Noir 2016 , 冇錯係 Blanc de Noir !
New Zealand Central Otago 係南島 ,  係較近南極的產區 , 氣候會好似 Burgundy 咁較凍 , 種 Pinot Noir 都幾適合

依支 7th Heaven Lally's Gold Bland de Noir 2016 , 入口較酸
Tasting Note:
Tiny Tropical Fruit Aroma (Pineapple, Peach)
Vibrant , a bit Mineral , Acidity High
Light Pale Pink Color , Bright
