Grand cru champagne - more toasty, yeasty, long lasting (Usually....)
When the label shows (Prestige) - means only for Grand Cru

Another Champagne Class with cheese pairing



Not many Champagne for tasting.....



Champagne Charles Heidsieck Brut Reserve NV ($300)
Appearance: Pale Lemon Yellow
Nose: Greenapple, Hint of honey, Hint of toast, Hint of nutty, Mineral Savoury, Biscuit, After 20min, more biscuit/yeasty
Palate: High acidity, still mineral, finish very few (a few seconds)
Conclusion: Acceptable




Champagne Mailly Grand Cru Blanc de Noirs NV ($710)
100% Pinot Noir
Full body, Red fruit, cream, strawberry, cherry

Match with cheese, nuts, foie gras, mushroom to reduce the acidity but not match Blue Cheese



Champagne Louis de Sacy Brut Rose Grand Cru NV ($585)
Salmon, Mineral savoury, red fruit, no nutty, strawberry, raspberry




Champagne Guy Charlemagne Grand Cru 2005 ($510)
Lemon yellow, greenapple, hint of nutty, mineral savoury, hint of honey, hint of smoky

依支 Domaine Marc Roy 係我其中一個我好 Like 既酒莊

Domaine Marc Roy Gevrey Chambertin Clos Prieur 2012 ($590)

13% abv, 0.27ha vine, Clos Prieur located near Mazis Chambertin (Grand Cru 田)

Production: 1500 bottles per year

Appearance: Medium Ruby
Nose: Strawberry, Red Cherry, Red Plum, Wet stone (Intense Red Fruit Aroma)
Palate: Medium+ Tannin, Medium+ Acidity, Mineral (Savoury), Great finish >60seconds keep lingering in mouth
Conclusion: Very Good and age well

屋企有老酒, 點都係想試下既

依支係 1970

Chianti classico riserva conti serristori 1970

Made from Sangiovese

Appearance: Garnet
Nose: Red fruit cherry, earthy wet forest feel
Palate: medium+ tannin, medium+ acidity, mineral, still tannic, oak spice peppery
Conclusion: Good

勁飲勁食 @ 為食館

是夜同一大班酒友去為食館
有蠔, 有雞, 有魚腩, 有蝦飯, 有蟶子 etc ...但重點係 - - 酒 !!!






Clos Saint Denis Grand Cru 2010 - Burgundy Grand Cru 係唔同d !!! 係特別香, 特別滑



Blanc de Blancs Ch. de Bligny Champagne 2006 - 又係好飲

Red Snake Single Malt Scotch Whisky - 好香, 唔係個d得好重酒精感既 whisky

Ch. Cantenac Brown Margaux 2006 - Still very tannic ..

Mount Mary Vineyard Yarra Valley 2004 - 依個莊係 Langtons Classification 係最高級別


Ch. Carbonnieux Pessac Leognan 1997 Blanc - 估你唔到咁重 earthy, wet stone, wet forest aroma

Champagne Barons de Rothschild - 大牌子.....質素唔係咁簡單


Gosset Champagne Grand Rose - 3支檳當中佢係最差....

Blind Tasting Bottle - 估唔到係 Barolo , 最初以為係 Pinot Noir, 但又好鬼 tannic, interesting blind tasting

環境唔錯, 氣氛好好, 依到 Sunday and Monday 係有 Free Corkage (Max 2 bottles !!!)
超正 !!!

Tuna Tartare - 依到比之前灣仔某間質素仲好好好好多......


Chilean Seabass - 魚肉嫩滑 , 好味 !!!


Pappardelle Pasta Beef Ragu - 外表好似肉醬意粉, 當然唔同喇, haha



當然要配上支白酒去慢慢歎喇!!!
同你去邊到食去邊到飲冇所謂, 只要.....

Cremant Jura

今次玩 d 特別野 - Cremant du Jura ($180)

上次帶朋友去中環酒鋪睇下有咩酒岩佢 , 雖然我唔係好了解佢 , 但起碼大家都有傾有講 , 知道佢 Prefer what type of wine (但佢又知唔知道我 prefer what wine ?)

睇黎下次帶佢去 wine bar 再慢慢同佢講我心目中既 wine list ! 依個都係一個動力比自己去continue blog post.

Chardonnay, Pinot Noir, Savagnin blend

Biodynamic cremant

Appearance: Lemon yellow
Nose: pure fruit aroma, pear, citrus lemon grass, white flower,
Palate: high acidity, mineral, vibrant
Conclusion: acceptable

To Greta Wild Pig Chardonnay VDP 2014

Apperance: golden yellow
Nose: oaked, smoky,
Palate: high acidity, citrus lemon,
Conclusion: fair



Beaumont des Crayer Champagne Grande Reserve

Appearance: golden yellow
Nose: bready, toasty, apple, pear, hint of honey
Palate: high acidity, citrus lemon
Conclusion: good

Weingut Wilhelm Gabel Schwarzriesling TBA Pfalz 1994

9% abv

Appearance: Deep brown
Nose: Rich apricot, red fruit raspberry, cranberry
Palate: apricot, high acidity, red fruit
Conclusion: very good amazing fruity in palate

感覺都唔錯 !!!

感謝一晚的時間比大家可以放鬆,可以暢快地飲新既酒

黎到中環 La Cabane - 一間專賣 Organic / Biodynamic Wine 既地方

大家坐向 Bartender Table 睇份 Wine List ,對住 Wine List 我雙眼發光,好多酒我都未聽過,再 Search 過好多酒鋪都冇得賣,原因都係酒莊唔出名,產量唔多,市場未必大賣

不過多得你帶我去,我試到好幾款酒

52% Chardonnay + 48% Pinot Noir

Jansz Located at northern Tasmania

Traditional method of winemaking

Fine bubbles, pale straw yellow
Pear, apple, high acidity, savoury (mineral), honey, hint of red fruit (still after a while)

Not bad, but i prefer more toasty, bready




Kilikanoon Mort's Block Watervale Riesling 2014 (Wineview $180)
Clare Valley Riesling

Bone dry, pale lemon yellow, smoky, petrol(mineral), flinty, lemon, lime
Acidity is a bit sharp to me




Ashbrook Estate Chardonnay 2013 Margaret River 13.8%

Lemon yellow, oaked, smoky, vanilla, butter MLF, hint of grapefruit, nutty spice from oak, high acidity but less attack than Riesling




De Bortoli Estate Grown Pinot Noit 2014 (Watson $288) 13% abv

Red fruit, cherry, strawberry
Pale ruby to garnet,
Earthy, wet leaf, medium tannin, hint of mineral




Wynns Coonawarra Estate Cabernet Sauvignon Black Label 2014 (Wineview $205)13.5% abv

Deep purple, black currant, hint of mint, veget leaf, black cherry, fined tannin, hint of chocolate





Langmeil Winery Valley Floor Shriaz Barossa 2014 (Victoriawines $225)

Deep purple

今次試既就係 Duval Leroy Champagne House 5支酒 , 都係 Vintage Champagne 最好飲 !!!


Wine 1:
Duval Leroy Fleur de Champagne 1er Cru
70% Chardonnay, 30% Pinot Noir

Small bubbles, straw yellow, pear, apple, hint of honey, mineral, high acidity, vibrant, hint of yeasty, chalky, hint of sugar cane, citrus




Wine 2:
Duval Leroy Brut Grand Cru Blanc de Blancs 2006
100% Chardonnay

Very fine bubbles, straw yellow, pear, apple, yeasty, white flower, vibrant, mineral, butter, creamy, intense palate



Wine 3:
Duval Leroy Femme de Champagne 2000
Chardonnay and Pinot Noir

Intense straw yellow, pear, apple, white flower, yeasty, chalky, mineral, intense creamy


Wine 4:
Duval Leroy Rose Prestige 1er Cru
80% Pinot Noir and Chardonnay

Pale Salmon, red fruit, grapefruit, savoury(mineral), steely, tannic




Wine 5:
Duval Leroy Lady Rose NV (dosage 25g/L)
Chardonnay and Pinot Noir

Pale Orange / Salmon orange, date, hint of apricot





New Zealand Sweet Wine

今次飲甜酒
講真, 甜酒唔係我最愛, 但學酒點都要試

Sweet Wine in New Zealand , 講真 NZ 做開 Sauvignon Blanc, Pinot Noir 依d still wine 為主
但Sweet Wine真係少見既

見平平地, 試下支 half bottle

Pegasus Bay Encore Noble Riesling 2011 New Zealand 10.5% abv ($227.8 因為咁岩有85折)
依支係用上最少 50% noble rot Riesling 去造

Canterbury Region (South Island)

Appearance: Amber
Nose: Apricot, Orange Blossom, Orange peel, honey
Palate: Apricot, Rich mineral, great finish, 穿透力強, high acidity to balance, full body
Conclusion: Very good , 飲完可能真係會 Encore !

天氣熱,原本想去上環試飲美國酒,但忘記 public holiday close !

轉去中環 Watson Wine Bar , 今個5月會有6支



我叫左3杯試下:



Philippe Charlopin Patizot Bourgogne Blanc 2012, 13% abv

Appearance: Lemon yellow
Nose: Pear, Citrus, Hint of lemon grass
Palate: High acidity, Hint of mineral, citrus lemon, simple finish
Conclusion: Acceptable



David Duband Cotes de Nuits Village Rouge 2013

Appearance: Pale ruby
Nose: Meaty, Red cherry, hint of earthy,
Palate: Spice, mineral, medium acidity, red fruit, oak tannin (medium+ tannin),
Conclusion: Good and can age, 酸略為不足


Cims de Porrera Vi de Vila Priorat Porrera 2012 (Wax Head)

Carignan and Garnacha Blend

Appearance: Intense Purple
Nose: Savoury(Mineral), Dark berry,
Palate: Medium+ Tannin, fruity berry in mouth
Conclusion: Good and can age more
